In general, when referring to data, strip is the removal of one or more characters from a file or a collection of files. For example, someone could search and replace for a particular word and replace it with nothing to strip a document of that word.
With a cable, stripping describes the removal of the plastic covering using a wire stripper that expose the cables wires. For example, when adding an RJ-45 connector to a Cat 5 cable, you must strip the cable to expose the wires before they can be inserted into the connector.
