In general, hybrid refers to anything that is made of two or more things. For example, a hybrid computer is a computer capable of accepting both digital and analog signals, unlike most computers that are only digital.
Under the Orange Book standard for recordable CDs, hybrid means a disc with one or more sessions already recorded, but has space allocated for future recording.
Hybrid can also refer to a compact disc containing both DOS/Windows and Apple software on the same disc. The DOS/Windows platform sees the disc as a normal ISO 9660 disc, while on a Mac it appears as an HFS disc.
